Kunihiro Takahashi, founder of Okina Daruma, has been nicknamed the god of soba noodle making. The shop here at VISON is the first branch in the four Tokai prefectures. The name of the shop is Ise Okina and it’s run by Aisaburo Ito. He trained at Resutaurant YEN in Saint-Germain-des-Prés, Paris, France, and Yamanashi Okina, a well-known soba restaurant that uses completely store ground soba flour. The store orders buckwheat from famous buckwheat growing regions around Japan and fully prepares the noodles in-house. This lets them provide soba noodles that balance the buckwheat’s color, aroma, and flavor.
