Delivered and sold by Yamasa Wakiguchi Suisan from Katsuura Fishing Port in Nachi-Katsuura Town, which boasts the highest yield of fresh maguro tuna in Japan. The tuna wholesaler was founded 120 years ago in 1897. Its collaboration with Michelin star chef Ryuji Teshima is issuing in a new future for sustainable marine products. The facility has a working tuna cleaning and preparation area, and it’s the world’s first experiential tuna specialty store to integrate wholesale, retail, and dining.
